Down here in the south, when people get together to visit, we seem to always center around a meal........It's what we Do, as cajuns, we love to eat... and we love to entertain..So i hope you will visit often to see what's cooking down south......

What a beautiful day.....I thought to start off my recipe portion of this blog, i would post about what we do every year for my husband's birthday. It's that time of the year, spring time, and lots of people here in south Louisiana get together and visit, and enjoy one of our favorite meals......
Boiled Crawfish!!!!!!!!!!!!!
The price of crawfish has risen over the past few years, so we don't get to enjoy them as often as years in the past. WHAT A TREAT!!!!!!!!! papa D and Mr. Larry boiled two sacks of crawfish for the family, and we celebrated my husbands birthday filling our stomaches with this cajun delight.

I think the little ones are amazed that these creepy crawling bugs can taste so good, when paw paw's done cooking them......
Cleaning and purging the crawfish with salt improves the flavor of the crawfish. Rinsing several times, then allowing them to soak in a tub of clean water until you are ready to throw them into the pot.
This is a basic recipe for boiling crawfish. Everyone does something a little different and adds their own seasonings to taste, such as cayenne pepper, celery, even carrots. Some folks add sausage links and other items to absorb the seasonings and to enjoy right along side the crawfish. Our favorites are the little new potatoes and corn. The Pro Boil, by Zatarain's has salt added, so we dont add additional salt.
you will need:
30-40lbs live crawfish
1 1/2- 2 cups of Zatarain's Pro Boil
5 lemons sliced in half
5-6 yellow onions whole or cut in half
2-3 whole garlics ( dont have to peel or divide)
1 lrg pkg fresh mushrooms
a small sack of new potatoes
small ears of corn ( pkg of 24 small ears frozen)
Fill a 10 gallon pot halfway with water and add Zatarain's Pro boil, allow to come to a rolling boil. Add all ingredients into pot except the crawfish. Boil for 15 min. or until potatoes are tender.
Remove the basket of cooked potatoes, corn and other seasoning, drain, and set aside, keeping the seasoned water boiling. Drain the soaking crawfish, lower in basket into water. Return to boil and time for 7-8 min.
Turn fire off, and let crawfish soak for 5-10 min to absorb seasoning. Strain, and serve hot.
It was a wonderful day filled with family and friends. Papa D and Mr Larry did an awesome job, the crawfish were really nice pond crawfish, everyone enjoyed them!!!!!!!!!!!!

ReplyDeleteStopped by your blog and was wondering if you can help me figure out how to can vegetables. Do you use a pressure canner or a water bath pot? We would like to start canning this year if our crops allow.
